Chicken Cacciatore

Chicken Cacciatore is a classic Italian rustic dish featuring tender chicken braised in a flavorful tomato sauce with herbs, vegetables, and olives, perfect for a comforting family dinner.

  • 4 bone-in, skin-on chicken thighs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup dry white wine
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 cup chicken broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup pitted black olives
  • 2 tablespoons capers, drained
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the chicken on all sides until golden, about 5-7 minutes per side. Remove and set aside.
  3. In the same skillet, add the onion, red bell pepper, and mushrooms; sauté until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute more until fragrant.
  5. Pour in the white wine to deglaze the pan, scraping up any browned bits, and let it reduce by half.
  6. Stir in the crushed tomatoes, chicken broth, oregano, and basil. Bring to a simmer.
  7. Return the chicken thighs to the skillet, nestling them into the sauce. Cover and cook on low heat for 30-35 minutes, until chicken is cooked through and tender.
  8. Add the olives and capers during the last 5 minutes of cooking.
  9. Garnish with freshly chopped parsley before serving.

Notes

For a richer flavor, serve Chicken Cacciatore over creamy polenta or buttered pasta. You can also add a splash of balsamic vinegar towards the end for extra depth.
