  • 4 cups diced potatoes (about 1-inch cubes)
  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.
  3. Add the sliced smoked sausage, diced onion, and minced garlic to the skillet. Cook for an additional 5 minutes until onions are translucent and sausage is browned.
  4. Sprinkle the ranch seasoning over the mixture and stir to combine.
  5. Transfer the potato and sausage mixture to an oven-safe dish. Sprinkle shredded cheddar cheese evenly on top.
  6. Bake in the preheated oven for 15 minutes or until cheese is melted and bubbly.
  7. Remove from oven, garnish with chopped parsley if desired, and serve hot.

Notes
