Cheesy Potato Skins

Crispy potato skins loaded with melted cheddar cheese, crispy bacon, and fresh green onions, perfect as a savory snack or appetizer.

Ingredients

  • 4 large russet potatoes
  • 2 cups shredded sharp cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 3 green onions, thinly sliced
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork and bake directly on the oven rack for 45-60 minutes until tender.
  2. Let the potatoes cool slightly, then cut them in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.
  3. Brush the potato skins with olive oil and season with salt and pepper. Place them skin side down on a baking sheet.
  4. Bake the skins for 10 minutes until crisp.
  5. Fill each skin with shredded cheddar cheese and crumbled bacon, then return to the oven and bake for another 5-7 minutes until the cheese is melted and bubbly.
  6. Remove from oven and top with sour cream and sliced green onions before serving.

Notes

For extra flavor, sprinkle some smoked paprika or chili powder on the potato skins before baking. Serve with your favorite dipping sauce.
