Carrot Cake Bars

These Carrot Cake Bars are moist, flavorful, and packed with grated carrots and warm spices, making them a perfect handheld dessert or snack.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat granulated sugar, brown sugar, and oil until combined. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in grated carrots, walnuts, pineapple, and raisins (if using).
  6. Pour batter into prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool completely before cutting into bars.
