Caramel Popcorn Balls

Sweet and crunchy caramel popcorn balls that are perfect for snacking or festive treats, combining buttery caramel with light, airy popcorn in delightful handheld bites.

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup unsalted butter (2 sticks)
  • 2 cups packed brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. In a large saucepan, melt butter over medium heat.
  3. Stir in brown sugar, corn syrup, and salt; bring mixture to a boil, stirring constantly.
  4. Allow mixture to boil without stirring for 4-5 minutes until it reaches a golden caramel color.
  5. Remove from heat and quickly stir in baking soda and vanilla extract; the mixture will bubble up.
  6. Immediately pour caramel sauce over the popped popcorn in a large bowl and gently fold to coat evenly.
  7. Let the mixture cool slightly until it’s safe to handle, then grease your hands with butter or cooking spray and shape the caramel popcorn into balls, about 2.5 inches in diameter.
  8. Place the popcorn balls on the prepared baking sheet and allow them to cool completely and set, about 30 minutes.

Notes

For extra fun, try mixing in chopped nuts, mini chocolate chips, or sprinkles before shaping the balls. Store in an airtight container to keep them fresh.
