Capricorn Cake

A rich and earthy spiced cake inspired by the determined Capricorn, featuring warm flavors of cinnamon and molasses perfectly balanced with a creamy cream cheese frosting.

  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup molasses
  • 1 cup buttermilk
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract and molasses.
  5. Alternately add the flour mixture and buttermilk to the creamed mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat the cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy.
  10. Once the cake is completely cool, spread the cream cheese frosting evenly on top.
  11. Slice and serve the Capricorn Cake, enjoying the warm and comforting flavors.

Notes

For an extra touch, sprinkle chopped toasted pecans on top of the cream cheese frosting for added crunch and flavor.
