These Buffalo Chickpea Wraps offer a spicy, flavorful twist on classic wraps with a wholesome chickpea filling tossed in zesty buffalo sauce, perfect for a quick and satisfying meal.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 large whole wheat tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup shredded carrot
  • 1/4 cup crumbled blue cheese or vegan cheese (optional)
  • Ranch or blue cheese dressing, for serving

Instructions

  1. In a medium bowl, mash the chickpeas lightly with a fork, leaving some texture.
  2. Stir in the buffalo sauce, olive oil, garlic powder, smoked paprika, salt, and pepper until well combined.
  3. Heat a skillet over medium heat and warm the chickpea mixture for 3-4 minutes, stirring occasionally.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Divide the chickpea mixture evenly among the tortillas.
  6. Top each wrap with shredded lettuce, diced tomatoes, red onion, shredded carrot, and crumbled blue cheese if using.
  7. Drizzle with ranch or blue cheese dressing if desired.
  8. Roll up the tortillas tightly, slice in half, and serve immediately.

Notes

For added crunch, try adding sliced celery or substituting the buffalo sauce with a milder barbecue sauce to suit your taste.
