Buffalo Chicken Dip Egg Rolls

Crispy egg rolls stuffed with spicy buffalo chicken dip make for a deliciously addictive appetizer perfect for game day or parties.

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 10 egg roll wrappers
  • Vegetable oil, for frying
  • Blue cheese or ranch dressing, for serving (optional)

Instructions

  1. In a large bowl, combine shredded chicken, cream cheese, ranch dressing, hot sauce, mozzarella, and cheddar cheese until well mixed.
  2. Lay out an egg roll wrapper with one corner pointing towards you. Spoon about 2 tablespoons of the buffalo chicken mixture in the center.
  3. Fold the bottom corner over the filling, then fold in the two side corners and roll tightly. Seal the top corner with a dab of water.
  4. Heat vegetable oil in a deep skillet over medium-high heat to 350°F (175°C).
  5. Fry the egg rolls in batches for about 2-3 minutes each side or until golden brown and crispy.
  6. Drain on paper towels and serve warm with blue cheese or ranch dressing if desired.

Notes

For a healthier option, bake the egg rolls at 425°F for 15-20 minutes, turning halfway through for even crispiness.
