  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, whisk the eggs with olive oil until combined.
  3. In another bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip each chicken breast into the egg mixture, then dredge thoroughly in the Parmesan breadcrumb mixture, pressing lightly to adhere.
  5. Place the coated chicken breasts on the prepared baking sheet.
  6. Bake for 20-25 minutes or until the chicken is cooked through and the crust is golden brown and crispy.
