Avocado Pasta Salad

A creamy and refreshing avocado pasta salad combining ripe avocados with tender pasta and fresh vegetables, perfect for a quick lunch or a light dinner.

  • 8 oz pasta (rotini or penne)
  • 2 ripe avocados, peeled and pitted
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup feta cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a blender or food processor, combine avocados, lime juice, olive oil, garlic, salt, and pepper. Blend until smooth to create the dressing.
  3. In a large bowl, combine the cooled pasta, cherry tomatoes, red onion, and cilantro.
  4. Pour the avocado dressing over the pasta mixture and toss gently to coat all ingredients evenly.
  5. If desired, sprinkle feta cheese on top before serving.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

For added crunch, consider topping the salad with toasted pine nuts or sunflower seeds just before serving.
