Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 1 cup cooked jasmine rice
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup edamame, shelled and cooked
  • 1 avocado, sliced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • For the Spicy Mayo:
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha sauce
  • 1 tsp lime juice

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Brush salmon fillets with olive oil, soy sauce, and a drizzle of sesame oil; season with salt and pepper.
  3. Place salmon in the air fryer basket and cook for 8-10 minutes, or until cooked through and flaky.
  4. Meanwhile, in a small bowl, mix mayonnaise, sriracha, and lime juice to make the spicy mayo.
  5. Assemble the bowl by placing cooked rice at the base, then layer shredded carrots, cucumber, edamame, and avocado slices on top.
  6. Place the cooked salmon fillet over the vegetables.
  7. Drizzle the spicy mayo over the salmon and garnish with additional sesame seeds or green onions if desired.
  8. Serve immediately and enjoy!

Notes

For an extra crunch, sprinkle toasted sesame seeds or add pickled ginger as a garnish. You can also substitute jasmine rice with quinoa or brown rice for a different texture.
